Ingredients
- 2 large eggplants
- 300 grams ground beef
- 1 egg yolk
- 10 green olives, 1 onion
- 60 grams shredded cheese
- Leerdammer® Character
- Salt, pepper, thyme

This recipe is based on Leerdammer®
Stuffed Eggplant with Beef and Shredded Leerdammer®
Instructions :
- Cut the eggplants in half lengthwise, then use a spoon to remove their flesh.
- Place in a mixing bowl the eggplant flesh, ground beef, egg yolk, chopped onion, olives cut into pieces, 30 grams of shredded Leerdammer® Character cheese, thyme, salt and pepper. Mix well to obtain a homogeneous consistency.
- Place the eggplants in a dish, stuff them with the mixture, tamp it down and sprinkle with the remainder of the Leerdammer® Character shredded cheese.
- Put in oven for 40 min at 180°.
