What are the nutritional qualities of light cheeses?

Light cheeses still have all the essential nutritional qualities of cheese. Their nutritional qualities are extremely valuable. They are rich in building elements: proteins and calcium which are essential for the body’s growth, but the quantity of fatty acids (and therefore cholesterol) is significantly reduced.

Can you give children light cheeses?

Yes. You need to ensure that they consume as many dairy products as possible (of any kind, and of course not forgetting milk) in order to ensure their calcium needs are fully met. However, if the child does not have any particular weight problems, eating light products is not necessary.

How do you make light products?

Lightening cheeses is done by removing fat (skimming the milk used in the manufacture). For processed cheeses the raw materials used are themselves lightened: skimmed milk and cheeses with low fat levels.
The fat levels in light cheeses should be between 20 to 30% fats (in the dry material).
The dry material or dry extract is what is left when all the water that it contains has evaporated. The dry material is composed of proteins, fatty materials or lipids, sugars or carbo-hydrates, mineral salts and vitamins. It is therefore the nutritional part of the food.

Why do we want cheese that has less fat?

The Sylphide® range allows the intake of protein and helps to balance diets that are too often rich in lipids without having to remove cheese, which is a valuable source of calcium and vitamins, from the diet. What’s more, these products are useful for women who love cheese but want to watch their weight.
