Ingredients
- 1 Medium sized spaghetti squash
- 1/4c Butter
- 2tsp Minced garlic
- 1/3c Flour
- 2c Milk
- 1 5oz pkg Boursin® Garlic & Fine Herbs
- 3tbs Bacon bits (omit for vegetarian version)
- Parmesan Cheese, salt & pepper to taste

Cheesy Spaghetti Squash
Instructions :
- 1. Put the whole squash in the microwave and cook on high until skin is tender (approx 8 - 10 min.) Remove using oven mitts - careful it's hot - and cut in half along the long side. Remove the seeds, place face down in a 13x9 glass baking dish. Add 1/4 cup water & cover with clear plastic wrap. Return to the microwave & cook on high until squash is tender (approx 5 - 8 min or longer for larger squash). Let this sit covered while you prepare the sauce.
- 2. In a large non-stick pan melt the butter over low heat, add the garlic & turn to medium heat, sweat the garlic for 1-2 minutes then add the flour stirring until fully mixed. Let the mixture cook for 1 minute then add the milk. Cook the mixture until thick & bubbly stirring often. Turn to low and slowly add the Boursin® cheese (tablespoon size chunks - not all at once). Stir until cheese is melted. Add salt & pepper to taste. Add the bacon bits, turn to simmer & cover.
- 3. Using a fork remove the spaghetti "strands" from the squash & place into an ovenproof 6x9 dish. Pour in the cheese sauce and mix thoroughly. Sprinkle parmesan cheese on top & place under the broiler until parmesan cheese is melted and bubbly. Enjoy!
